After the beans are freed from the outer layers of skin and pulp by natural enzymes, they are fermented in tanks for 72 hours. This precise fermentation period gives the beans a higher acidity and a cleaner, floral flavor, with a light, clove up front, cooling out to lychee enveloped in an orange-like acidity.
